- Chicken Salad

- 4 chicken leg quarters, boiled or roasted, meat removed and cut into chunks
- 1 can pineapple tidbits, drained
- 1 cup frozen peas, parboiled and chilled
- 1/2 to 1 cup chopped walnuts
- mayonaise

- Mix all of the above ingredients in a bowl (enough mayonaise to make
- it moist). Grind in some black pepper and add salt to taste.

- This is surprisingly addictive.

- CHINESE CHICKEN SALAD

- 4 chicken breasts
- teriyaki sauce
- 1 head shredded lettuce
- 3-4 sliced green onions
- 1 pkg. slivered almonds
- 1/2 pkg. maifun (rice sticks)(found in Chinese food aisle):optional
- 3 small cans mandarin oranges

- Dressing:
- 1/2 tsp. dry mustard
- 2 Tbsp. sugar
- 2 tsp. soy sauce
- 1 Tbsp. sesame oil (or vegetable oil)
- 1/4 c. salad oil
- 3 Tbsp. vinegar

- Marinate chicken in teriyaki sauce (up to 1 day) and bake.Deep fry
- maifun in oil. Just before serving, toss all ingredients together and
- add dressing (just combine and briskly shake or stir ingreds.).
